Bell Pepper Sandwiches

Ingredients
  

  • 1 large bell pepper
  • ½ ripe avocado mashed
  • 2 tablespoons hummus
  • 2 tablespoons crumbled feta or goat cheese
  • 1 tablespoon premade pesto

Instructions
 

  • Cut a bell pepper into two halves and remove the stem and seeds.
  • Fill with mashed avocado, hummus, cheese and pesto
  • Enjoy open faced or smush both halves together and pack up to enjoy on the go.
