Cesar’s interest in nutrition began as a teenager when he was diagnosed with obesity and other related medical conditions. At that time he became fascinated with the connection between food and health. As Cesar began studying nutrition, he noticed nutrition-related health disparities in disadvantaged communities–his community–and felt driven to work to help improve health outcomes in these groups.
Cesar has over 9 years of experience working with underserved populations as a registered dietitian and nutrition manager. He has an array of experience working with patients of all ages and backgrounds, including prenatal, weight management, bariatric, diabetes, metabolic disease, and pediatric patients. He believes in the power of food to help his patients feel their best.
Favorite cultural dish or comfort food: Boiled pinto beans topped with onion, cilantro, fresh cheese, and accompanied by fresh handmade corn tortillas.
Go-to morning beverage: Double espresso black
Fave nutrient-packed snack: Baruka nuts are my favorite nut to eat for both their flavor and nutrient profile.
Grocery shopping tip: Fruits and vegetables that are cheapest are usually in season so rotate fruit and vegetable intake according to seasons.
