About Elisabeth
Elisabeth decided to become a dietitian when she saw the impact of food choices on her family’s health. Her mother was able to reverse her pre-diabetes diagnosis with food choices while her aunt was able to stay off of dialysis with weekly visits to see her RDN. That was the turning point for Elisabeth and when she knew she wanted to do that one day for other people.
Elisabeth loves finding unique solutions to her patient’s barriers and problem-solving as a team because she understands nutrition cannot be one-size-fits-all. She has experience in weight management and mental health fields with a specific focus on changing diet habits while maintaining a healthy relationship with food.

Favorite thing to purchase at the Farmer’s Market or Grocery Store: Fresh fruit – peaches, raspberries, bananas, and watermelon
Favorite cultural dish or comfort food: Halupki, which is ground meat/rice/onion wrapped in cabbage. My family cooks it in sauerkraut rather than the traditional tomato sauce!
Favorite nutrient-packed snack: Carrots and hummus – it’s easy to pre-pack, filling, and it’s delicious. It adds lots of fiber and balances fat, carbs, and protein in one snack.
What’s one small thing someone can do today to work toward a balanced eating pattern/lifestyle?: Start by adding foods IN rather than taking foods OUT of your diet. If you are craving a cookie, eat it! Just also add a source of fiber and maybe a protein to your snack as well.
A mindful eating moment you had recently: Enjoying a meal by using your senses is a great way to incorporate mindful eating. I recently enjoyed the satisfying crunch of toasted sourdough bread in my salmon avocado toast.
Sleep ritual I never forget: White noise and a sleep mask. I know I will feel better the next morning and make thoughtful decisions if I’m well rested.
