About Rachel

Rachel grew up on a farm in South Carolina, where food and cooking were always a part of her life. Years later, after graduating college, food became the enemy. With a new job in a new city, food felt like the only thing she could control. She got rigid with her diet to the point where she’d eat dinner before going out with friends, so she would stay on track. It was completely unsustainable. Over time, Rachel remembered her love for cooking and eating and (thankfully) made peace with food again. This journey ultimately prompted her to return to graduate school to study nutrition, so she could help others navigate the same process. Before joining the Culina Health team, Rachel worked as a renal dietitian and then as an outpatient dietitian for the Northside Hospital system, primarily counseling patients for weight management, diabetes management, PCOS, GI conditions, and pregnancy.

Go-to morning beverage: Coffee with vanilla nutpods creamer and stevia

Favorite nutrient-packed snack: Good Culture cottage cheese with chopped cucumbers and Stacy’s pita chips.

Favorite recipe: Bon Appetit’s kale and brussels sprout salad. I have converted many kale haters with this one!

What’s one small thing someone can do today to work toward a balanced eating pattern/lifestyle? Eat breakfast! Specifically one with protein, fiber, and healthy fats like eggs with avocado toast, a green protein smoothie, or overnight oats with Greek yogurt and berries. A balanced breakfast can make all the difference in your day; it gives you sustained energy and you’ll be better equipped to make nutritious choices later on.

Favorite book/TV show/movie: Demon Copperhead by Barbara Kingsolver

A habit you swear by: Take a walk at least once a day.

Nutrition myth or trend you find particularly annoying and would like to set the record straight: That any one food or supplement will make a difference in your overall health. It’s about the sum of your habits and choices, not one food or miracle supplement that’s going to change the game.
