About Elizabeth

When Elizabeth was a teenager, she enjoyed learning about nutrition but eventually began restricting her diet in an unhealthy way. She met with a dietitian who gave her some tough love and opened her eyes to her disordered eating habits. Once she healed from negative thought patterns, she wanted to help others understand food in a healthy way and to understand that all foods can fit! Through nutrition she found she could focus on several interests in one career– cooking, science, health, and helping others.

Favorite thing to purchase at the farmer’s market or grocery store: Local honey or a unique gift for a loved one

Favorite book/TV show: Forever a Gilmore Girl fan and any book by Shauna Niequist

What’s one small thing someone can do today to work towards a balanced eating pattern/lifestyle? Make a veggie box for the week. Throw it on the table for you and/or the family whenever you want to snack or add it to the side of a meal if you forgot to make a veggie!

Favorite nutrient-packed snack: Peanut butter on sprouted bread with chia seeds and berries sprinkled on top

What’s your nutrition superpower? Giving plenty of ideas so you are never in a food rut. Variety is the spice of life!
